Ingredients for 6 people

  • 300 g Cantucci Toscani (PGI-certified) 
  • 150 g dark chocolate
  • 100 g butter
  • 45 ml Vin Santo (Italian dessert wine)
  • 3 egg yolks
  • 75 g powdered sugar
  • 30 g unsweetened cocoa powder
  • Powdered sugar for decoration, as needed 

Recipe

Coarsely chop the Cantucci Toscani PGI. Take a saucepan and, over heat, melt the chopped chocolate, butter, and powdered sugar. Still stirring over the heat, add the egg yolks one at a time. Pour the mixture into a bowl and add the chopped Cantucci Toscani PGI, Vinsanto, and cocoa powder. Chill in the fridge for fifteen minutes. Then, spread the mixture on a sheet of parchment paper, shape it into a salami, and refrigerate for 4-5 hours. Before serving, remove the paper, roll the chocolate salami in powdered sugar, and tie it with a string. Slice into pieces about one finger thick.
