Ingredients for 6 people
- Cantucci Toscani (PGI-certified), as needed
- Whole fresh milk – 680 ml
- Granulated sugar – 180 g
- 3 organic egg yolks
- Cornstarch – 30 g
- Rice starch – 30 g
- Zest of one organic lemon
- Dark chocolate – 150 g
- Alchermes liqueur, as needed
Recipe
Prepare the pastry cream: in a saucepan, mix the egg yolks with the sugar, add the starches, and, while stirring, dilute with the hot milk. Place on low heat, add the lemon zest, and, stirring constantly, bring to a boil and thicken. Divide the cream into two bowls. To one, add the chopped chocolate and mix. Fill two piping bags with the two creams and let them cool.
At this point, dip the Cantucci Toscani PGI in Alchermes. Arrange them at the bottom of a bowl, cover with a layer of pastry cream, then a layer of chocolate cream, and finally another layer of soaked Cantucci Toscani PGI. Chill in the refrigerator for a couple of hours.
